Chicken and Sweetcorn Soup

This is a classic Chinese starter that is very easy to make.

1 can of creamed sweetcorn
1 chicken breast, diced
1 egg
2 cups of vegetable or chicken stock
Spring onion, sliced
1 tablespoon of vegetable or olive oil
1 teaspoon of corn flour
1 tablespoon of soy sauce
Salt and pepper to season


1. Mix the chicken with 1 tablespoon of soy sauce, 1 tablespoon of olive oil, a pinch of salt and pepper and a teaspoon of corn flour. Leave to marinate in the fridge for 20-30 minutes.

2. Slice the spring onion and set aside.

3. Heat two cups of vegetable or chicken stock. Add the marinated chicken and creamed sweetcorn. Season with salt, pepper and soy sauce.

4. Simmer for 4 - 5 minutes until the chicken is cooked and add a teaspoon of corn flour (mixed with water).

5. Turn off the heat and add the lightly beaten egg and stir. Serve immediately and garnish with the spring onion. Enjoy your Chinese chicken and sweetcorn soup!
